What's Up Wednesday? October 25, 2017


The last Wednesday of the month is here!  How has October been such a long month that sped by so quickly?  It's been a great month - we've been on vacation, seen 5/6 nieces and nephews, spent time with family and friends, volunteered, planned our next vacation, and there are still a few days left.  

What we're eating this week?

I don't know if anyone cares about what we've been eating but I sure do like posting it every week.  As I'm trying to really up my healthy meal options I have found this to be the best.  I look back at the hits and misses when I plan out our meals.  I'm slowing adding back in meat and dairy.  I'd say my diet is 75% vegan, 15% vegetarian, 10% no limits.  I'm losing a bit of weight and I feel great.  I can tell when I've had a eat all the things day and it's not my best self.

What I'm reminiscing about?


We had the most relaxing anniversary trip.  Take me back!




What I'm loving?

Seeing God answer prayers for women to be compelled to read the Bible.  This year of reading the Bible has really been awesome.  We're reading as a church and having some amazing teaching and discussions all focused on God's word. I pray daily that people, women especially, will start reading and letting God speak through it.  I've had a few encounters with strangers in the last month who I was able to encourage and direct in the Bible.  Only God can do that and I'm so humbled he let me see a glimpse.


What we've been up to?

We've had some fun weekends lately!  This October has been packed full of fun.   We've also been planning and preparing for Perspectives

What I'm dreading?

Dread is always so strong!  Maybe I'll change this one to "What I'm Avoiding?" this month.  Getting a second opinion and a treatment plan for my arthritis.  I'd like to take my tests to a specialist and get a plan that involves more than getting a shot and taking pills.  

What I'm working on?

I bought some new boot cut jeans last month. They were way too long with the sandals I tried them on with.  But the short version was too short.  Even with thicker soled shoes they were too long and they looked funny rolled up.  I hemmed them so that I kept the original hem at the bottom.  Also working on some crochet projects.  Just finished a baby blanket for our tie breaker baby of our nieces and nephews.  The temperature blanket and some pumpkins are also in my bag.    

What I'm excited about?

I'm pretty excited about the match up for the World Series this year.  It's not the Royals, but it's not the same old teams.  Also excited to find out what plant based meals I like.  

What I'm reading?

I'm finishing up a couple books from last month that got put on the back burner.  Be sure to check out my post next week to see what I managed to finish this month.  

What I'm listening to?

Same podcasts as usual.  I just love the That Sounds Fun Podcast with Annie F Downs.  She has some great guests and her passion for the Lord and His church is awesome!

What I'm watching?

I feel like we're watching a lot of football on TV.  Football is one of my favorites to watch on TV.  

What I'm wearing?

Oh Target!  You suckered me in with your new line (A New Day) and a BOGO 1/2 off sweater sale.  I bought two new scrappin' sweaters and I'm daydreaming about all the coziness ahead.  Scrappin' sweaters are a term coined by Matt.  They are those big, cozy, and soft sweaters you just wrap yourself up in and call it a day.  I had a couple old ones that he used to say it looked like I was going to a scrap booking party when I wore them.  


This is a chenille open cardigan, with pockets.  When I wear this I want to hibernate.  It's the best!


The second is a hooded striped version, with pockets.  Pockets are extra importamnt.  

What I'm doing this weekend?

I mentioned that we've had busy and fun weekends this month.  I looked at the calendar for this weekend and it's clear.  YAY!!  There's a chance of snow, so maybe some stew.  Definitely my cozy sweaters and comfy pants.

What I'm looking forward to next month?

Thanksgiving!! It's my side of the families holiday.  Sonia is due with that tie breaker baby very soon after that so we'll be here in KC.  I guess we better plan what/where/if we'll be doing that day.

What else is new?

I've heard great things about collagen for joint pain.  After some research I found a brand that I liked the sound of, I'm sure there are others out there.  I'm adding this collagen powder to my morning routine, either in my coffee or smoothie.  It's flavorless and packed with protein.  

Bonus: What is my favorite Thanksgiving side?

No question - Stuffing.  I've been making Miss Dorothy's stuffing the last few years.  I've made it my own a bit using some tricks my mom taught me and Miss Dorothy's southern recipe.
