What did we eat this week? Week 7

This week started off with some not so healthy choices, but man did we have fun!

Breakfast
Pumpkin Granola with almond milk
Smoothies

Lunch
Chiefs Tailgate party last Sunday - see below
Vegetable Barley soup from Costco
Leftovers
Sundried Tomatoes on a whole wheat cracker (off brand ritz), with goat cheese and balsamic glaze - This was my lunch yesterday SO good!  The tomatoes were an impulse buy at Costco.  I tried a sample on a ritz and turned around to grab a jar.

Dinner
Leftover Papa John's from last Saturday
Zaxby's chicken tenders
Broccoli Rice casserole with a spinach salad (the casserole was a new recipe that was so gross I ate a bowl pumpkin granola with the salad).  I won't link to the recipe, but when a hardcore vegan says it's just like cheese - it's not.  Just eat cheese.  LOL!
Sheet pan supper - organic chicken gouda apple sausages (Amy Lu brand from Costco), roasted butternut squash and green beans
Vegetable Barley soup from Costco with whole wheat biscuits.
Garden of Eden Salad from The Mixx with chicken (gasp!) - The Mixx is this yummy sandwich/salad/soup place that's local to KC.  We went to the one off the Plaza on Friday night.  We were going to walk around the Plaza afterwards but it was way too crowded so we went to Half Price books in Westport instead.
Cauliflower Crust pizza - perfect Saturday night meal with some veggies on the pizza and as a side.

Last Sunday, we went to a tailgate party at Arrowhead stadium.  It was so much fun!  I made Hawaiian Mimosas, Chiefs Game Day popcorn (strawberry and lemonade, and chocolate chip cookies with red and yellow sixlets on top.

Someone brought Hot Apple Cider Mimosas.

Check out this cute veggie tray!  Hooray for veggies!

There were brats, beans, two kinds of potatoes, chips and dip, more cookies, and bbq.  I had two brats - one was beef burnt end and one was blackberry/blueberry.  Super good!
