Roasted Banana
Last week on spring break I really wanted a sweet treat. I thought about having a banana dipped in peanut butter but I wanted something different. Hence the roasted banana with vanilla yogurt and toasted coconut and pecans. It couldn’t have been easier.
Roasted Banana
Ingredients:
1 banana
1 tablespoon honey
A sprinkle of cinnamon
A sprinkle of sea salt
Topping ingredients:
A couple spoonfuls of plain Greek yogurt
Maple syrup to taste for sweetness, I used about a teaspoon
Vanilla, I used about 1/2 a teaspoon
Toasted Coconut
Toasted Pecans
Directions:
Slice the banana and place onto sheet of foil. Drizzle with honey. Sprinkle with cinnamon and sea salt. Wrap up that goodness into a little foil packet. Bake at 400 for about 12 minutes. Meanwhile, take a couple spoonfuls of plain Greek yogurt and mix with maple syrup and vanilla. Toast coconut and pecans on the stove top. Keep an eye on it, once you smell the coconut/pecans take it off. When the bananas are done very carefully open one end of the foil packet and pour it into a bowl. Very carefully, it’s hot stuff! Top with the yogurt, coconut, and pecans.
Enjoy! A delicious, sweet treat that is chock full of healthy ingredients.
