Cookie Butter Banana Bread

We had a lot of snow days in February. I think we were out of school more than we were in school last month.  I passed the time by doing lots of baking and watching lots of Netflix.  I found this recipe for Biscoff Banana Bread.  Since I knew we were going to start eating clean in March I knew I needed to use up as much of the Trader Joe’s Cookie Butter in our cabinet as possible. 

I followed the recipe almost exactly.  I used the Trader Joe’s Cookie Butter and left off the cookie streusel topping.  I baked them in my mini loaf pan.  My plan was to use my mini loaf pan so I could take some to work but with all the snow days Matt and I enjoyed them all to ourselves.  Yummy!
